Ingredients

* 1 1/2 cups wheat bran
* 1/2 apple, grated
* 1 cup low-fat buttermilk
* 1 cup all-purpose flour
* 1/4 cup packed brown sugar
* 1 teaspoon baking soda
* 2 egg whites
* 12 paper muffin tin liners


Preparation & Cooking

Preheat oven to 350 degree F. In a small bowl, combine the bran and buttermilk and set aside to soak for ten minutes. Crack the eggs and separate the egg whites. Discard the yolks. Finely grate the apple such that at least 1/2 a cup of shreds are generated.

Line a muffin pan of baking tray with 12 paper liners. In a separate medium to large sized bowl, mix together the flour, brown sugar and baking soda. Next, stir in the bran and buttermilk mixture and also the egg whites. Finally, fold in the grated apple.

Divide the batter into the twelve lined muffin cups. Bake for eighteen minutes or until a toothpick inserted into the center of each muffin comes out clean. Remove from the oven and allow to cool for five minutes before removing from the pan and serving.

Healthy Hint: The fruit and bran in these tasty muffins provide the bulk of your daily cholesterol-lowering fiber intake.
