Apple Coffee Cake

Ingredients

* 5 cups of tart cooking apples,
- cored, peeled and chopped
* 1 cup of dark raisins
* 1/2 cup of pecans, chopped
* 1 cup of sugar
* 1/4 cup vegetable oil
* 2 teaspoons of vanilla
* 1 egg, beaten
* 2 1/2 cups sifted all-purpose flour
* 1 1/2 teaspoon of baking soda
* 2 teaspoons of ground cinnamon


Preparation

Preheat the oven to 350 degrees F. Lightly oil a 13x9x2-inch cake tin or pan. Peel, core and slice the apples then in a large mixing bowl, combine them with the sugar, raisins, and pecans. Mix well and stand for thirty minutes.

Beat the egg and stir into the apple mix with the oil and vanilla. Sift together the flour, soda, and cinnamon and stir into the apple mixture about 1/3 at a time; just enough so that the dry ingredients are now lightly moistened. Turn the cake mix out into the prepared cake tin or pan. Bake for thirty-five to forty minutes. Remove from the oven and turn out onto a suitable rack or stand to cool before you serve and enjoy.

Healthy Hint: The apples and raisins in this recipe provide both moisture and natural sweetness, which means less oil and sugar are required.

Nutritional Information: Each serving contains 188 calories, 5g total fat, less than 1g saturated fat, 11mg cholesterol and 68mg sodium
