Sun Kissed Mediterranean Potato Pie

* 1 lb potatoes
* 1 onion, finely chopped
* 2 garlic cloves, crushed
* 1 medium eggplant, diced
* 1 16 oz can of black eyed beans
Preparation & Cooking
Preheat the oven to 375 F. Wash and thickly slice the potatoes. Cook them in lightly salted boiling water for ten minutes or until tender. Chop and mince the onion, eggplant and garlic and in a medium saucepan, cook in a little vegetable stock, just until softened and lightly browned.
Next, add in the beans, soya mince or Quorn, the rest of veg stock, yeast extract, tomato puree, sun-dried tomatoes and rosemary. Bring to the boil and simmer for about five minutes, stirring occasionally. Spoon the vegetables into a large ovenproof dish. Drain the potato slices and arrange them so that they overlap the vegetable filling.
Healthy Hint: Potato slices make a healthier alternative to a heavy pie-crust in this popular European dish.
